  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1 cup unsalted butter softened
  • 4 large eggs
  • 1 cup milk whole or buttermilk
For the Fruit Mix
  • 2 cups mixed dried fruits (raisins, currants, cherries)
  • 1 cup chopped nuts (walnuts or almonds)
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
Optional Glaze
  • 1 cup powdered sugar
  • 2 tbsp lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking pan by greasing it with butter or lining it with parchment paper.
Mixing
  1. Mix together the dry ingredients in a bowl: flour, baking powder, and spices.
  2. Cream the butter and sugar in a separate mixing bowl until light and fluffy, about 3-5 minutes.
  3. Add eggs one at a time to the butter mixture, beating well after each addition.
  4. Combine the dry ingredients gradually into the wet mixture, blending until just incorporated.
  5. Fold in your choice of dried fruits and nuts gently using a spatula.
Baking
  1. Pour the batter into your prepared pan, spreading it evenly with a spatula.
  2. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted comes out clean.
