Ingredients
  

  • 1.5 cups butter at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3.5 cups flour
  • 0.25 teaspoon salt
  • powdered sugar for dusting
  • 0.75 cups seedless raspberry preserves or flavor of your choice

Method
 

  1. Preheat the oven to 350°F.
  2. In the bowl of an electric mixer fitted with the paddle attachment, mix together the butter and sugar until just combined. Add the vanilla.
  3. Sift together the flour and salt in a medium bowl. Add this mixture to the butter mixture. Mix on low speed until the dough starts to come together.
  4. Turn out dough onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
  5. Roll the dough out to 1/8-inch thick.
