Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Filling
  • 1/4 cup mayonnaise preferably homemade
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cream cheese softened
  • 1 tablespoon fresh chives chopped
Garnish
  • 1 tablespoon paprika for sprinkling
  • 2 tablespoons bacon bits crispy

Method
 

Prepare the Eggs
  1. Place eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10 minutes.
  2. Transfer eggs to an ice bath to cool, then peel and slice in half lengthwise.
Make the Filling
  1. In a mixing bowl, scoop out the yolks and mash them with a fork.
  2. Add mayonnaise, Dijon mustard, sweet pickle relish, white vinegar, salt, black pepper, cream cheese, and chives. Mix until smooth.
Fill the Eggs
  1. Using a piping bag, fill the egg whites with the yolk mixture.
  2. Sprinkle with paprika and top with bacon bits for garnish.
Serve
  1. Arrange on a serving platter and enjoy!
