Mexican Pinto Beans

Ingredients
  

Main Ingredients
  • 2 cups pinto beans dried or canned
  • 4 cups water for cooking
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 cup fresh cilantro chopped, for garnish

Method
 

Cooking the Beans
  1. If using dried pinto beans, rinse and soak them in water overnight. Drain and rinse again before cooking.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic, cumin, chili powder, salt, and black pepper. Cook for another minute until fragrant.
  4. Add the soaked pinto beans and water to the pot. Bring to a boil, then reduce heat to low and cover.
  5. Simmer for about 60 minutes, or until the beans are tender. If using canned beans, reduce cooking time to 15 minutes.
  6. Adjust seasoning as needed and serve hot, garnished with fresh cilantro.

Notes
