Mexican Lasagna with Tortillas

A delicious and hearty Mexican-inspired lasagna made with layers of tortillas, seasoned meat, beans, and cheese.

Ingredients
  

Meat and Beans
  • 1 lb Ground beef Can substitute with ground turkey or chicken
  • 1 can Black beans Drained and rinsed
  • 1 cup Corn Frozen or canned
  • 1 packet Taco seasoning
Lasagna Layers
  • 8 pieces Corn tortillas Can use flour tortillas if preferred
  • 2 cups Shredded cheese Cheddar or Mexican blend
  • 1 cup Sour cream For layering
  • 1 cup Salsa Your choice of heat level

Method
 

Prepare the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add black beans, corn, and taco seasoning to the skillet. Stir and cook for another 5 minutes.
Assemble the Lasagna
  1. Preheat the oven to 350°F (175°C).
  2. Spread a thin layer of salsa on the bottom of a 9x13 inch baking dish.
  3. Layer 4 tortillas over the salsa, followed by half of the meat mixture, half of the sour cream, and half of the cheese.
  4. Repeat the layers, finishing with tortillas, salsa, and remaining cheese on top.
Bake
  1. Cover the dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Let the lasagna cool for 5 minutes before slicing. Serve with additional sour cream and salsa if desired.

Notes

This dish can be made ahead of time and refrigerated before baking. Just add a few extra minutes to the baking time if baking from cold.
