  • 2 tablespoons Olive oil quality
  • 3 cloves Garlic fresh, minced
  • 4 cups Vegetable broth low-sodium
For the Seasoning
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Fresh herbs like thyme or rosemary
Optional Add-ins
  • 1 teaspoon Chili flakes for heat
  • 1 tablespoon Lemon juice fresh

Method
 

Preparation
  1. Rinse the butter beans thoroughly under cool running water to remove any excess starch or impurities.
  2. Soak the beans overnight in a large bowl filled with water.
Cooking
  1. Cook the soaked beans in a pot of boiling salted water for about 30-40 minutes until tender.
  2. Sauté garlic and onion in a skillet over medium heat until fragrant and golden brown, about 5-7 minutes.
  3. Combine the cooked butter beans with the sautéed mixture in the skillet, stirring gently to blend flavors. Let everything simmer together for an additional 10 minutes.
  4. Season with salt, pepper, and a splash of lemon juice to brighten the flavors just before serving.
