  • 2 large Sweet Potatoes
  • cup Melted Unsalted Butter
  • 1.5 teaspoon Cinnamon
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • ½ teaspoon Paprika
  • cup Maple syrup
  • 2 tablespoons Maple syrup for topping
  • cup Chopped pecan
  • 1 teaspoon Thyme

Method
 

Preparation Steps
  1. Clean and cut sweet potatoes into 1/2-inch thick rounds (you can either keep the skin on or peel it).
  2. Preheat oven to 200 Celsius / 400 F.
  3. In a bowl, add sliced sweet potatoes, melted butter, 1 teaspoon of cinnamon, salt, paprika, and pepper. Mix everything well using a spatula or your hands, or place in a ziplock bag and shake to mix.
  4. Arrange sweet potato slices on a baking tray in a single layer, leaving little space between slices. Do not overcrowd the pan.
  5. Bake for 20-25 minutes at 200 Celsius.
  6. After baking, the sweet potatoes should be firm and tender. Baking time may vary based on thickness.
  7. Meanwhile, mix maple syrup, chopped pecans, 0.5 teaspoons of cinnamon, and thyme in a bowl.
  8. Remove the baking tray and top each sweet potato slice with about 1 teaspoon of the maple pecan mixture.
  9. Put the tray back into the oven and bake for another 8-10 minutes or until the sweet potatoes look caramelized around the edges.
  10. Serve as is or with some feta garnished on top.

Notes
