Mango Sticky Rice

A traditional Thai dessert made with glutinous rice, fresh mango slices, and a sweet coconut sauce.

Ingredients
  

Sticky Rice
  • 1 cup glutinous rice soaked in water for at least 4 hours
Coconut Sauce
  • 1 cup coconut milk preferably unsweetened
  • 1/4 cup sugar adjust to taste
  • 1/4 teaspoon salt
Mango
  • 2 ripe mangoes peeled and sliced
Topping
  • 1 tablespoon sesame seeds toasted, optional

Method
 

Prepare the Sticky Rice
  1. Drain the soaked glutinous rice and place it in a steamer lined with cheesecloth. Steam for about 25-30 minutes until tender.
Make the Coconut Sauce
  1. In a saucepan, combine coconut milk, sugar, and salt. Heat over low heat until the sugar dissolves, but do not boil.
Combine and Serve
  1. Once the rice is cooked, transfer it to a mixing bowl and add half of the coconut sauce. Mix well and let it sit for 10 minutes.
  2. To serve, place a portion of sticky rice on a plate, top with mango slices, and drizzle with the remaining coconut sauce. Sprinkle with toasted sesame seeds if desired.

Notes

For best results, use ripe mangoes that are sweet and fragrant. You can also add a pinch of pandan extract to the coconut sauce for extra flavor.
