Ingredients
  

Potatoes
  • 5 small/medium potatoes peeled and cubed
Seasoning for Potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
Ground Beef
  • 1 pound ground beef
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.25 teaspoon cayenne
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried cilantro
  • 1 tablespoon minced garlic
Toppings
  • 1.5 cups microwaved white Queso
  • 1 cup sour cream
  • 1 cup Pico de Gallo
  • fresh cilantro for garnish

Method
 

Preparation
  1. Peel, wash potatoes, and cut into cubes.
  2. Add the potatoes to a large bowl. Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  3. Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes, shaking them around at least a couple of times while they cook.
Cooking Ground Beef
  1. Heat a skillet over medium high heat.
  2. Add the ground beef to the skillet and cook until browned. Drain any extra grease.
  3. Season with salt, cayenne, chili powder, cumin, paprika, dried cilantro, and black pepper. Add minced garlic and stir well.
Combining and Serving
  1. Once the potatoes and ground beef are cooked, combine them in the skillet and pour warmed up Queso over them.
  2. Top with fresh cilantro. Serve each plate with sour cream and Pico de Gallo.
