Ingredients
  

Lamb Chops
  • 4 pieces lamb shoulder chops bone-in preferred
Marinade
  • 1/4 cup olive oil
  • 3 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground
Vegetable Side
  • 2 cups mixed vegetables e.g., bell peppers, zucchini, and onions

Method
 

Marinate the Lamb
  1. In a mixing bowl, combine olive oil, minced garlic, chopped rosemary, lemon juice, salt, and black pepper to create the marinade.
  2. Add the lamb shoulder chops to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the Grill
  1. Preheat the grill to medium-high heat.
Grill the Lamb
  1. Remove the lamb chops from the marinade and let excess marinade drip off.
  2. Place the lamb chops on the grill and cook for about 6-8 minutes per side, or until they reach an internal temperature of 145°F (medium rare).
Prepare the Vegetables
  1. While the lamb is grilling, toss the mixed vegetables with olive oil, salt, and pepper.
  2. Grill the vegetables alongside the lamb for about 10-15 minutes, turning occasionally until tender.
Serve
  1. Remove the lamb chops and vegetables from the grill. Let the lamb rest for a few minutes before serving.
  2. Serve the lamb shoulder chops with the grilled vegetables on the side.
