Kolacky Cookies

Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 cup unsalted butter softened
  • 1/2 cup sour cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Filling
  • 1 cup fruit preserves apricot, raspberry, or your choice
Topping
  • 1/2 cup powdered sugar for dusting

Method
 

Prepare the Dough
  1. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the sour cream and vanilla extract, mixing until well combined.
  3. Gradually add the flour and salt, mixing until a soft dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Shape and Fill Cookies
  1. Preheat the oven to 350°F (175°C).
  2. On a floured surface, roll out the chilled dough to about 1/8 inch thick.
  3. Cut into squares or circles using a cookie cutter.
  4. Place a small spoonful of fruit preserves in the center of each piece.
  5. Fold the corners of the dough over the filling to create a pocket, pinching to seal.
  6. Place on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until lightly golden.
Finish and Serve
  1. Allow cookies to cool slightly on the baking sheet.
  2. Dust with powdered sugar before serving.
