Cake Batter
  • 3 medium kiwis peeled and chopped
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a blender, combine the chopped kiwis, sugar, vegetable oil, eggs, vanilla extract, and milk. Blend until smooth.
  3. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Pour the blended kiwi mixture into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared baking pan.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
