Ingredients
  

Pasta
  • 12 oz spaghetti
  • 2 tbsp salt for pasta water
Sauce
  • 2 tbsp olive oil extra virgin
  • 3 cloves garlic minced
  • 1 can crushed tomatoes 28 oz
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp sugar to balance acidity
Garnish
  • 1/4 cup parmesan cheese grated
  • 2 tbsp fresh basil chopped

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and set aside, reserving a cup of pasta water.
Prepare the Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add crushed tomatoes, oregano, basil, sugar, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally.
Combine
  1. Add the drained spaghetti to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  2. Serve hot, garnished with grated parmesan cheese and fresh basil.
