Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes
  • vegetable oil for rubbing
  • 1 teaspoon kosher salt divided
Filling
  • ¼ cup maple syrup
  • 6 tablespoons butter at room temperature, divided
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup old fashioned oats
  • ½ cup chopped pecans
Topping
  • ¼ cup brown sugar
  • 4 tablespoons all-purpose flour
  • mini marshmallows to taste if desired

Method
 

Baking and Preparing
  1. Line a baking sheet with foil and preheat the oven to 425 degrees.
  2. Wash and dry sweet potatoes and prick all over with a fork. Place on baking sheet.
  3. Rub sweet potatoes all over with vegetable oil and sprinkle with kosher salt.
  4. Roast for 40-45 minutes until a fork easily pokes into the center of the potatoes.
  5. Remove from oven and allow to cool for 20-30 minutes or until cool enough to handle.
  6. Cut a slit in the top of each sweet potato and carefully scoop out the inside leaving a bit to support the skins.
  7. Place scooped sweet potato in a bowl and add 6 tablespoons butter, ¼ cup maple syrup, 1 teaspoon salt, cinnamon, and nutmeg.
  8. Whip with an electric mixer until fluffy and smooth.
  9. Spoon filling back into shells.
  10. Melt remaining 4 tablespoons of butter in a small saucepan over low heat.
  11. In a small bowl combine oats, pecans, brown sugar, and flour. Pour melted butter over the top and toss with a fork to combine.
  12. Top sweet potatoes with crumble mixture and dot with mini marshmallows if desired.
  13. Return to oven and bake an additional 15-20 minutes to brown up the topping.
  14. Serve warm.
