Chai Tea Base
  • 3 oz chai tea concentrate
  • 4 oz oat milk
Nondairy Apple Crisp Cold Foam
  • 3 oz nondairy apple crisp cold foam
  • ¾ cup soy milk
  • ¼ cup oat milk
  • 3 tbsp apple brown sugar syrup
  • ¼ tsp soy lecithin powder optional
  • ¼ tsp soy protein isolate optional
Apple Brown Sugar Syrup
  • 1 cup water
  • 1 cup packed brown sugar
  • 2 cups sliced apples
  • ½ tsp ground cinnamon

Method
 

Prepare the Drink
  1. Add chai tea concentrate to an ice-filled glass. Pour oat milk into the glass.
  2. Top the drink with nondairy apple crisp cold foam.
Make the Nondairy Apple Crisp Cold Foam
  1. Mix soy milk, oat milk, apple brown sugar syrup, soy lecithin, and soy protein isolate (if using) in a mason jar and shake to combine. Alternatively, stir all ingredients together in a bowl.
  2. Turn the mixture into cold foam using an electric frother, hand mixer, or blender until it forms a foam.
Prepare the Apple Brown Sugar Syrup
  1. In a medium saucepan, combine sugar, water, sliced apples, and cinnamon and bring to a boil.
  2. Once boiling, lower heat and let simmer for about 15-20 minutes until thickened and apples have softened.
  3. Strain mixture into a bowl, pressing down on the apples to extract as much juice as possible.
  4. Store syrup in a bowl or mason jar in the fridge. It will continue to thicken as it cools.
