Ingredients
  

Carrots
  • 4 medium carrots peeled and cut into sticks
Pickling Liquid
  • 1 cup water
  • 1 cup white vinegar
  • 1/2 cup honey hot honey preferred
  • 1 tablespoon salt kosher salt recommended
  • 1 teaspoon red pepper flakes adjust to taste
  • 1 teaspoon black peppercorns
  • 2 cloves garlic smashed

Method
 

Prepare the Carrots
  1. Peel the carrots and cut them into sticks.
Make the Pickling Liquid
  1. In a saucepan, combine water, white vinegar, honey, salt, red pepper flakes, black peppercorns, and smashed garlic.
  2. Bring the mixture to a boil over medium heat, stirring until the salt and honey dissolve.
Pickle the Carrots
  1. Place the carrot sticks in a clean mason jar.
  2. Pour the hot pickling liquid over the carrots, ensuring they are fully submerged.
  3. Seal the jar and let it cool to room temperature.
  4. Refrigerate for at least 24 hours before serving for best flavor.
