- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
- Trim and halve the Brussels sprouts, removing any damaged outer leaves. Place them in a large bowl and toss with olive oil, salt, and pepper.
- Spread the Brussels sprouts on the baking sheet in a single layer with the cut side down.
- Roast the Brussels sprouts in the preheated oven for about 20-25 minutes, stirring halfway through for even crisping.
- While the Brussels sprouts are roasting, prepare the honey butter glaze. In a small saucepan over medium heat, melt the butter. Add honey and soy sauce, stirring until well blended. If using, add crushed red pepper flakes.
- Let the glaze simmer for about 1-2 minutes to allow the flavors to meld, then remove from heat.
- Once the Brussels sprouts are roasted, remove them from the oven and place them in a large bowl. Pour the warm honey butter glaze over them and gently toss to coat evenly.
- Transfer the glazed Brussels sprouts to a serving dish and serve hot.

For a vegan option, substitute butter with a plant-based alternative and honey with maple syrup. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
