Ingredients
  

Potato Cake Base
  • 2 cups mashed potatoes preferably cold
  • 1 cup all-purpose flour
  • 1 large egg beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped green onions optional
  • 2 tablespoons butter for frying

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine the mashed potatoes, flour, beaten egg, salt, pepper, and green onions. Mix until well combined.
Form the Cakes
  1. Divide the mixture into equal portions and shape them into flat cakes.
Cook the Cakes
  1. Heat butter in a frying pan over medium heat. Fry the potato cakes for about 5-7 minutes on each side, or until golden brown.
Serve
  1. Remove from the pan and drain on paper towels. Serve warm with sour cream or your favorite dipping sauce.
