Method
Making the Tortillas
- Gather ingredients: Start by measuring out your flour, salt, baking powder, and fat.
- Mix dry ingredients: In a large bowl, combine the flour, salt, and baking powder. Whisk them together until well-blended.
- Add fat: Cut in the shortening or lard until the mixture resembles coarse crumbs.
- Pour water: Gradually add warm water to the mixture while stirring with a fork.
- Knead dough: Transfer the dough to a lightly floured surface and knead it gently for about 2-3 minutes.
- Rest dough: Cover the dough with a damp cloth and let it rest for at least 30 minutes.
- Divide dough: After resting, divide the dough into 8-10 equal balls.
- Roll out tortillas: On a lightly floured surface, take one ball and flatten it slightly. Use a rolling pin to roll it out into an even circle about 1/8 inch thick.
- Cook tortillas: Heat a cast-iron skillet over medium-high heat. Place the rolled tortilla on it and cook for about 30 seconds on each side.
- Keep warm: As you cook each tortilla, stack them in a clean kitchen towel to keep warm until serving.
