Ingredients
  

Grilled Chicken Salad
  • 2 pieces chicken breasts boneless, skinless
  • 1 tablespoon olive oil for grilling
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 cups mixed greens arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1/2 cup feta cheese crumbled
  • 1 lemon juiced for dressing
Quinoa and Black Bean Bowl
  • 1 cup quinoa uncooked
  • 2 cups water for cooking quinoa
  • 1 can black beans drained and rinsed
  • 1 cup corn fresh or frozen
  • 1 red bell pepper diced
  • 1 avocado diced
  • 1 teaspoon cumin
  • 1 teaspoon lime juice for dressing

Method
 

Grilled Chicken Salad
  1. Preheat the grill to medium-high heat.
  2. Rub the chicken breasts with olive oil, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side until cooked through.
  4. Let the chicken rest for 5 minutes, then slice it.
  5. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, and feta cheese.
  6. Top the salad with sliced grilled chicken and drizzle with lemon juice.
Quinoa and Black Bean Bowl
  1. Rinse quinoa under cold water and combine with water in a pot.
  2. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed.
  3. In a large bowl, mix cooked quinoa, black beans, corn, bell pepper, and avocado.
  4. Season with cumin and lime juice, and toss to combine.
