Ingredients
  

Sweet Potatoes and Chicken
  • 2 large sweet potatoes
  • 2 tablespoons olive oil for sweet potatoes
  • ½ teaspoon salt for sweet potatoes
  • ½ teaspoon garlic powder for sweet potatoes
  • ½ teaspoon paprika for sweet potatoes
  • 1 ½ pounds chicken breast cut into cubes
  • 2 tablespoons olive oil for chicken
  • 1 tablespoon minced garlic
  • 2 teaspoons paprika for chicken
  • ½ teaspoon cumin
  • ¼ teaspoon chili powder
  • ½ teaspoon lemon pepper seasoning
  • ½ teaspoon salt for chicken
  • ¼ teaspoon pepper
  • 1 whole lemon cut into discs
  • 1 batch red pepper sauce
  • 2 cups cauliflower rice
  • 2 cups steamed or sautéed veggies of choice

Method
 

Cooking Steps
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Scrub the sweet potatoes and cut into wedge/fry shapes.
  3. Drizzle the sweet potatoes with olive oil, then sprinkle with salt, garlic powder, and paprika. Toss well to combine.
  4. Transfer the sweet potatoes to a baking sheet lined with parchment paper and roast for 20 minutes.
  5. Meanwhile, cut the chicken into about 1 inch cubes and add to a mixing bowl.
  6. Toss the chicken with olive oil and all spices until well combined.
  7. After the sweet potatoes have cooked for 20 minutes, either add the chicken to a second baking sheet lined with parchment paper or scoot the sweet potatoes over and add the chicken to the same sheet. Top the chicken with lemon slices.
  8. Bake for an additional 15 minutes or until the chicken is cooked through and the sweet potatoes are crispy.
  9. Serve with red pepper sauce, cauliflower rice, choice of veggies, and fresh herbs if desired.
