Ingredients
  

For the Enchiladas
  • 1 lb ground beef 80/20 blend for best flavor
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 oz refried beans optional
  • 8 large corn tortillas
  • 2 cups shredded cheese cheddar or Mexican blend
For the Red Sauce
  • 1 can red enchilada sauce 15 oz
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder

Method
 

Prepare the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
  3. Stir in cumin, chili powder, and refried beans (if using). Cook for another 2-3 minutes.
Assemble the Enchiladas
  1. Preheat the oven to 350°F (175°C).
  2. Spread a thin layer of red sauce on the bottom of a baking dish.
  3. Fill each tortilla with the beef mixture and a sprinkle of cheese, then roll up and place seam-side down in the baking dish.
  4. Pour remaining red sauce over the top and sprinkle with remaining cheese.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
