Ingredients
  

Marinade Ingredients
  • 2 lb Flank Steak
  • 1/2 cup EVOO Extra Virgin Olive Oil
  • 1/2 cup Red Cooking Wine
  • 1 Juice Lime
  • 1 Tbs Chili Powder
  • 2 tsp Cumin
  • 2 tsp Smoked Paprika
  • 1/2 tsp Sea Salt
  • 1/2 tsp Pepper
Salsa Ingredients
  • 4 ears Corn Fresh
  • 2 Avocados Pitted, skinned, and chopped
  • 1/4 cup Red Onion Finely chopped
  • 1 Jalapeño Finely chopped
  • 2 Juice Limes Zest included
  • 1/4 cup Cilantro Chopped
  • Sea Salt To taste
  • Pepper To taste

Equipment

  • Grill
  • large bowl
  • Ziplock Bag
  • Knife
  • Platter

Method
 

Marinating the Steak
  1. Add all ingredients for the marinade into a ziplock bag along with the Steak. Seal and refrigerate for 30 minutes to 8 hours.
  2. After marinating, bring the steak to room temperature for 30 minutes before grilling.
Preparing the Salsa
  1. Remove Corn Kernels from the cob with a knife and place them in a large bowl.
  2. Add all of the remaining salsa ingredients to the bowl and stir. Taste and add more Sea Salt or Pepper to your liking.
Grilling the Steak
  1. Heat grill to 400 degrees Fahrenheit.
  2. Grill Steak for 5-7 minutes on each side or until internal temperature reaches 135°F for medium rare.
  3. Remove from grill and place on a platter or cutting board to rest for 5 minutes.
  4. Cut up Steak, serve on Corn Tortillas, and top with Avocado Corn Salsa.

Notes
