Ingredients
  

Vegetables
  • 2 cups cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 bell pepper green bell pepper diced
  • 1 small red onion thinly sliced
Cheese and Olives
  • 1 cup feta cheese crumbled
  • 1/2 cup kalamata olives pitted and halved
Dressing
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dried oregano optional
  • to taste salt
  • to taste black pepper

Method
 

Preparation
  1. In a large mixing bowl, combine the cherry tomatoes, cucumber, green bell pepper, and red onion.
  2. Add the crumbled feta cheese and kalamata olives to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and black pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
