Ingredients
  

  • 1.1 lb all purpose flour
  • 2 teaspoons salt
  • 2 teaspoons instant yeast
  • 1 teaspoon sugar
  • 2 cups warm water
  • 3 tablespoons extra virgin olive oil
  • basil pesto
  • rosemary and salt
  • cherry tomatoes
  • olives
  • oregano

Method
 

Preparation
  1. In a large mixing bowl add the flour and salt and stir together.
  2. Separately in a cup, mix the warm water, sugar, and yeast.
  3. Slowly pour the liquid into the flour bowl whilst stirring, then mix until well combined.
  4. Drizzle the top with 1 tablespoon of olive oil and cover with plastic wrap.
  5. Place the bowl in the fridge to proof overnight for 10-14 hours.
Baking
  1. The next day, the dough should have tripled in size and become bubbly.
  2. Brush a non-stick muffin tin with olive oil, especially around all the edges.
  3. Distribute the dough into the muffin tin.
  4. Cover the muffin tin and leave to proof at room temperature in a warm place for 1 hour.
  5. Preheat oven to 425°F / 220°C.
  6. Once the dough has risen, drizzle them with olive oil and dimple the dough.
  7. Sprinkle them with salt and add your toppings, pressing firmly to stick.
  8. Bake on the bottom rack for 18-23 minutes until golden brown.
  9. Remove from the oven, and place on a cooling rack.
