Ingredients
  

Dough
  • 2 cups gluten-free all-purpose flour ensure it contains xanthan gum
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup cold water
  • 1 large egg for egg wash
Filling
  • 1 cup fresh strawberries hulled and chopped
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
Icing
  • 1 cup powdered sugar
  • 2 tablespoons milk or dairy-free alternative
  • 1 teaspoon vanilla extract

Method
 

Prepare the Dough
  1. In a mixing bowl, combine gluten-free flour and sugar. Add cold butter and mix until crumbly.
  2. Gradually add cold water until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
Make the Filling
  1. In a saucepan, combine strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat until thickened, about 5-7 minutes.
Assemble the Poptarts
  1. Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface to about 1/8 inch thickness.
  2. Cut into rectangles and place half on a baking sheet lined with parchment paper. Spoon filling onto each rectangle.
  3. Top with remaining rectangles and seal edges with a fork. Brush with egg wash.
  4. Bake for 20-25 minutes or until golden brown. Let cool.
Make the Icing
  1. In a bowl, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled poptarts.
