Ingredients
  

Dough
  • 2 cups gluten-free all-purpose flour Ensure it contains xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 packet instant yeast
  • 3/4 cup warm water About 110°F
  • 2 tablespoons unsalted butter Melted
Baking Soda Bath
  • 1/4 cup baking soda
  • 4 cups water
Topping
  • 1 tablespoon coarse sea salt

Method
 

Prepare the Dough
  1. In a mixing bowl, combine gluten-free flour, salt, sugar, and yeast. Mix well.
  2. Add warm water and melted butter to the dry ingredients. Stir until a dough forms.
  3. Knead the dough for about 2-3 minutes until smooth. Let it rest for 10 minutes.
Shape the Pretzel Bites
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Divide the dough into small pieces and roll each piece into a bite-sized ball.
Baking Soda Bath
  1. In a saucepan, bring water to a boil and add baking soda.
  2. Carefully drop the pretzel bites into the boiling water for about 30 seconds. Remove and place on the baking sheet.
Bake
  1. Sprinkle coarse sea salt on top of the pretzel bites.
  2. Bake in the preheated oven for 12-15 minutes or until golden brown.
Serve
  1. Remove from the oven and let cool slightly before serving.
