Ingredients
  

  • 4 6 oz salmon fillets, skin-on room temperature
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon paprika
  • 5 oz fresh baby spinach washed and dried
  • 1/2 cup heavy cream room temperature
  • 1/4 cup white wine optional
  • 2 tablespoons cream cheese softened
  • 1/4 cup Parmesan cheese freshly grated
  • 1 tablespoon lemon juice fresh squeezed
  • 1/4 teaspoon red pepper flakes optional
  • salt and black pepper to taste

Method
 

  1. Remove salmon fillets from refrigerator 15 minutes before cooking. Pat completely dry and season both sides with salt, pepper, and paprika.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat.
  3. Carefully place salmon skin-side up in hot pan. Cook for 4-5 minutes without moving it.
  4. Flip salmon carefully and cook another 3-4 minutes until cooked through. Remove to plate and tent with foil to keep warm.
  5. Reduce heat to medium. Add 1 tablespoon butter to the same pan. Add garlic and thyme, cooking for 30 seconds until fragrant.
  6. Add white wine if using and let reduce by half.
  7. Add heavy cream and cream cheese, whisking until smooth. Bring to a gentle simmer.
  8. Stir in Parmesan cheese until melted.
  9. Add spinach in handfuls, stirring gently until wilted. Season sauce with salt, pepper, and lemon juice to taste.
  10. Return salmon to pan, nestle into sauce. Add remaining butter and red pepper flakes if using. Let meld together for 1-2 minutes.
