Ingredients
  

Vegetables
  • 4 cups broccoli florets fresh
  • 1 medium red bell pepper sliced
  • 2 cloves garlic minced
Legumes
  • 1 can chickpeas drained and rinsed
Sauce
  • 3 tablespoons soy sauce low sodium
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
Garnish
  • 2 tablespoons sesame seeds toasted
  • 2 scallions sliced for garnish

Method
 

Preparation
  1. Wash and cut the broccoli into florets and slice the red bell pepper.
  2. Drain and rinse the chickpeas.
Cooking
  1. Heat the sesame oil in a wok over medium-high heat.
  2. Add the minced garlic and sauté for 30 seconds until fragrant.
  3. Add the broccoli and red bell pepper, stir-frying for about 5 minutes until tender-crisp.
  4. Stir in the chickpeas and soy sauce, cooking for another 3-4 minutes until heated through.
  5. Remove from heat and drizzle with rice vinegar.
  6. Serve hot, garnished with sesame seeds and sliced scallions.
