Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2-3 tablespoons cold water
Custard Filling
  • 1 cup milk whole
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
Topping
  • 1 cup mixed fresh fruits e.g., strawberries, kiwi, blueberries
  • 1 tablespoon apricot jam for glaze

Method
 

Prepare the Crust
  1. In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Stir in egg yolk and cold water until the dough forms. Wrap in plastic and chill for 30 minutes.
  3. Preheat the oven to 350°F (175°C). Roll out the dough and press it into a tart pan.
  4. Prick the bottom with a fork and bake for 15-20 minutes until golden. Let cool.
Make the Custard
  1. In a saucepan, heat milk until just boiling. In a bowl, whisk together sugar, cornstarch, and egg yolks.
  2. Slowly pour hot milk into the egg mixture, whisking constantly. Return to the saucepan and cook over medium heat until thickened.
  3. Remove from heat and stir in vanilla extract. Let cool slightly before pouring into the tart shell.
Assemble the Tart
  1. Once the custard is set, arrange the mixed fresh fruits on top.
  2. Heat apricot jam until melted and brush over the fruits for a glaze.
  3. Refrigerate for at least 1 hour before serving.
