Ingredients
  

Cake Base
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Frosting
  • 1 cup heavy cream chilled
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
Toppings
  • 1 cup mixed fresh fruits such as berries, kiwi, and mango
  • 1/4 cup edible flowers such as pansies or nasturtiums

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, mixing until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
Make the Frosting
  1. In a chilled mixing bowl, whip the heavy cream until soft peaks form.
  2. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
Assemble the Cake
  1. Once the cake is cooled, spread the whipped frosting evenly over the top and sides of the cake.
  2. Decorate the top with mixed fresh fruits and edible flowers.
  3. Slice and serve the cake chilled.
