Ingredients
  

Base Ingredients
  • 1 cup plain Greek yogurt
  • 1/2 cup all-natural peanut butter
  • 1 scoop vanilla protein powder
  • 2 Tbsps almond flour
Toppings and Coating
  • 3 Tbsps raw peanuts, coarsely chopped
  • 1 cup dark chocolate, melted
  • 1 Tbsp unrefined organic coconut oil
  • flaky sea salt for sprinkling on top
  • 4 wooden popsicle sticks

Method
 

Preparation
  1. Line a sheet pan with parchment paper and make space in your freezer for it.
  2. In a medium bowl, whisk the yogurt, peanut butter, protein powder, and almond flour together until very smooth.
  3. Divide this mixture into 4 round molds on the prepared sheet pan.
  4. Sprinkle with chopped peanuts, lightly pat the peanuts into the yogurt, then insert a wooden stick into the center of each one.
  5. Freeze for 2 hours, or until firm.
Finishing Touches
  1. Meanwhile, melt the chocolate together with the coconut oil.
  2. Dip each frozen pop into the melted chocolate, sprinkle with sea salt, and serve immediately or freeze until ready to serve.
  3. To store: wrap tightly with parchment or plastic. Store in the freezer for up to a month.
