Ingredients
  

Rice
  • 2 cups cooked rice preferably day-old
Vegetables
  • 1 cup peas frozen or fresh
  • 1 cup carrots diced
  • 1 cup green onions chopped
Protein
  • 2 eggs large beaten
  • 1 cup chicken cooked and diced, optional
Sauces and Oils
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil for frying

Method
 

Prepare Ingredients
  1. Gather all ingredients and prepare them by chopping vegetables and cooking rice if not using day-old rice.
Cook Eggs
  1. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add beaten eggs and scramble until fully cooked. Remove and set aside.
Stir-Fry Vegetables
  1. In the same wok, add another tablespoon of vegetable oil. Add carrots and stir-fry for 2-3 minutes. Then add peas and green onions, cooking for another 2 minutes.
Combine Rice and Sauce
  1. Add the cooked rice to the wok, breaking up any clumps. Pour in soy sauce and sesame oil, mixing well to combine all ingredients.
Add Eggs and Serve
  1. Fold in the scrambled eggs and chicken (if using). Stir-fry for an additional 2 minutes until everything is heated through. Serve hot.

Notes

For a vegetarian option, omit the chicken and add more vegetables or tofu.
