Ingredients
  

Base
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese cheddar or Mexican blend
  • 4 medium tortillas flour or corn
Vegetables
  • 1 cup bell pepper diced
  • 1 cup spinach fresh or frozen
  • 1/2 cup onion diced
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs and milk until well combined.
  3. Stir in the shredded cheese, diced bell pepper, spinach, onion, salt, pepper, and paprika.
Assembly
  1. Place one tortilla in the bottom of a greased 9-inch pie dish.
  2. Pour half of the egg mixture over the tortilla.
  3. Repeat with another tortilla and the remaining egg mixture, topping with the last tortilla.
Baking
  1. Bake in the preheated oven for 30 minutes, or until the quiche is set and lightly golden on top.
  2. Let cool for a few minutes before slicing and serving.
