Preparation
- Thaw the pie crust on the counter for about 10 minutes.
- Line two large baking trays with parchment and cut out 8 gingerbread people using a large gingerbread cutter.
- Roll up the scraps and re-roll the dough to get a total of 8 shapes (to make four pies).
- Lay out half of the cutouts on parchment lined trays and brush the edges with the egg wash.
- Pipe the center of the shapes with jam, making sure not to overfill.
- Press down the edges where you applied the egg wash to seal.
- Use a coffee stirrer or straw to poke holes into the sealed edges before baking.
- Bake at 400°F for 10-12 minutes until golden brown.
- Remove from the oven and cool completely before decorating.
Decoration
- Once cooled, insert licorice laces through the holes for hair and tie them gently together.
- Cut 12 round pieces of fondant for buttons and make impressions inside each circle for detail.
- Attach the fondant buttons to the pies using corn syrup as glue.
- Use a food pen or paintbrush to draw an 'X' on the fondant buttons and the pies.
- Create stitch marks on the bodies using a paintbrush or food pen.
- Paint a heart onto the left side of the doll’s chest with corn syrup, then cover with red sanding sugar.
- Use red heart cocktail sticks for decoration, cutting them if necessary to achieve desired length.
