  • 1 count shallot peeled and diced
  • 3 cloves garlic pressed or minced
  • 2 cups sweet peas raw or frozen
  • ¼ cup aged parmesan freshly grated, more to taste
  • sea salt to taste
  • black pepper to taste

Method
 

  1. In a large skillet, heat olive oil over medium high heat. Add the shallots and garlic, and cook until they are tender and slightly brown, about 5 minutes.
  2. Add the fresh or frozen peas to the skillet (you do not need to thaw the frozen peas beforehand), and cook for another 5-7 minutes or until the peas are tender.
  3. Remove from heat and stir in the freshly grated parmesan. Season with salt and pepper to taste.
