Cheese
  • 1 pound medium cheddar cheese
  • 8 ounces cream cheese freeze for 1 hour
Marinade
  • 1/4 cup extra virgin olive oil
  • 1/4 cup white wine vinegar or champagne vinegar
  • 1 clove garlic minced
  • 1/4 tsp Italian seasoning
  • 1/4 cup fresh herbs finely chopped
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Method
 

Preparation
  1. Freeze the cream cheese for 1 hour.
  2. Stir together all the ingredients for the marinade and set aside.
  3. Cut the cheddar cheese into equal squares (about 1.5”x1.5” and 1/4” thick).
  4. Slice the partially frozen cream cheese into squares matching the size of the cheddar cheese.
  5. Arrange rows of cheese in a baking dish, alternating between cheddar and cream cheese.
  6. Spoon the marinade equally over the cheese. Cover tightly and refrigerate to let the flavors meld.
  7. Remove the marinated cheese about 30 minutes before serving.
