  • 1 lb ground beef or ground turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 2 cups beef broth
  • 2 cups elbow macaroni uncooked
  • 1 tbsp paprika
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

  • 1 cup shredded cheese cheddar or mozzarella
  • 1/4 cup parsley chopped

Method
 

Cooking the Goulash
  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, beef broth, paprika, oregano, salt, and black pepper.
  4. Bring the mixture to a boil, then add the elbow macaroni.
  5. Reduce heat to low, cover, and simmer for about 20 minutes, or until the pasta is tender.
  6. Serve hot, topped with shredded cheese and parsley if desired.
