Ingredients
  

Butter and Coating
  • 2-3 tablespoons butter softened
  • 2-3 tablespoons unsweetened cocoa powder
Chocolate Mixture
  • 1 cup chopped semisweet or bittersweet chocolate approximately 170 g
  • 10 tablespoons salted butter
  • 1/8 teaspoon salt pinch
  • 1/2 teaspoon vanilla extract
Eggs and Sugars
  • 3 large eggs
  • 3 large egg yolks
  • 1 1/2 cups powdered sugar approximately 171 g
Dry Ingredients
  • 1/2 cup all-purpose flour approximately 71 g

Method
 

Preparation
  1. Preheat oven to 375-400 degrees F.
  2. Grease the bottom and sides of six 6- or 8-ounce ramekins with butter and coat with cocoa powder.
  3. In a medium bowl, melt the chocolate and butter in 1-minute increments in the microwave until smooth.
  4. Off the heat, stir in salt and vanilla. Allow the mixture to cool to room temperature.
Mixing and Baking
  1. In a large bowl, beat the eggs and egg yolks together until thick and light in color (2-3 minutes).
  2. Add powdered sugar and mix until combined.
  3. Add the cooled chocolate mixture and the flour, mixing just until combined.
  4. Divide the batter among the ramekins and place on a baking sheet.
  5. Bake for 12-13 minutes until the sides are set but the center is soft.
  6. Allow to sit for 2-3 minutes before loosening the edges with a knife.
  7. Invert the ramekins onto plates and serve dusted with powdered sugar or with toppings.
