Preparation
- In a medium bowl, mash together all Kiev butter ingredients until lemon juice is incorporated into the butter.
- Cut chicken breasts in half lengthwise and create a pocket in each breast for stuffing.
- Stuff each chicken breast with 1 Tbsp of Kiev butter and seal the pocket with a pinch.
- Season both sides of the chicken breast with salt and pepper.
Breading Process
- Set up three breading stations: one with flour, one with beaten eggs, and one with Panko crumbs.
- Dredge chicken in flour, dip in eggs, and coat in breadcrumbs.
Cooking
- Heat 1/4" of oil in a large deep skillet over medium heat. Once hot, add chicken in a single layer and fry until golden brown (about 4 minutes per side), until it reaches 165˚F.
- Season hot fried chicken with salt, garnish with parsley, and serve with lemon wedges.

Feel free to experiment with different herbs in the Kiev butter or swap chicken for turkey. Store leftovers in an airtight container for up to three days.
