Ingredients

  • 2 cups vegetable broth You can use water if you’re in a pinch.
  • 1 tablespoon olive oil Avocado oil or coconut oil makes a nice alternative.
For the Veggies
  • 1 medium onion (diced) Shallots can be used for a milder taste.
  • 2 cloves garlic (minced) You could use 1/2 teaspoon garlic powder as a substitute.
  • 1 whole bell pepper (chopped) Any color works, including green for more bitterness.
  • 1 whole zucchini (sliced) Yellow squash can be swapped in easily.
  • 2 cups spinach leaves (fresh) Kale is a good alternative if you want something heartier.
For Seasoning
  • 1 teaspoon cumin Coriander works well in its place.
  • 1 teaspoon paprika Smoked paprika will intensify the flavor.
  • Salt and pepper to taste Always adjust based on your preference.

Preparation
  1. Gather ingredients: Start by collecting all your favorite fresh veggies, grains, and lean proteins.
  2. Chop vegetables: Dice your selected vegetables into bite-sized pieces.
  3. Cook grains: In a pot, bring water to a boil and add your grains. Cook according to package instructions.
  4. Sauté vegetables: In a skillet over medium heat, add olive oil and toss in the chopped veggies. Sauté until vibrant and slightly tender.
  5. Combine ingredients: Once the grains are cooked and veggies are sautéed, mix them together in the skillet.
  6. Season to taste: Sprinkle in your favorite herbs and spices, taste and adjust seasonings as needed.
