  • 2 cups milk
  • 5 tablespoons packed brown sugar divided
  • 1.5 teaspoons ground cinnamon
  • 0.75 teaspoon kosher salt
  • 1 teaspoon pure vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13 baking dish with butter or cooking spray.
  2. Slice the brioche into 1-inch cubes and transfer the cubed bread to a large mixing bowl.
  3. In a small mixing bowl, combine the eggs, milk, 3 tablespoons of brown sugar, cinnamon, and salt; whisk until well combined.
  4. Slowly pour half of the egg mixture over the brioche, gently folding it to coat.
  5. Add the remaining custard and fold again just until absorbed.
  6. Transfer the brioche to the prepared dish, spreading it into an even layer and sprinkling the remaining brown sugar on top.
  7. Bake until golden brown and the custard is set, about 25-30 minutes. Top with desired toppings and serve immediately.
