Ingredients
  

  • 4 medium overripe bananas mashed
  • ½ cup unsalted butter melted
  • ¾ cup white sugar
  • 1 large egg
  • 1 teaspoon chocolate extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ cup cocoa powder
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9×5-inch loaf pan with nonstick baking spray.
  3. In a large stand mixer, combine the melted butter and white sugar and whip for 2 minutes until well combined.
  4. Add the egg, scraping down the sides of the bowl before mixing in the chocolate extract and mashed bananas for another 30 seconds.
  5. Slowly add in the all-purpose flour, cocoa powder, baking soda, and salt, mixing only until just combined to prevent overmixing.
  6. Fold in the semi-sweet chocolate chips gently until evenly distributed.
  7. Pour the batter into the prepared loaf pan and bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for at least 30 minutes before inverting it onto a cooling rack to cool completely.
  9. Slice and serve as desired.
