  • 0.5 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 1 cup honey
  • 0.5 cups unsalted butter (softened)
  • 0.75 cups brown sugar
  • 3 large eggs
  • 1 tablespoon grated orange zest
  • 1 cup orange juice

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by greasing and flouring it.
  2. In a bowl, whisk together the all-purpose flour, baking powder, baking soda, ground ginger, ground cinnamon, and salt. Set aside.
  3. In another bowl, cream together honey, softened butter, and brown sugar until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then blend in orange zest and juice until smooth.
  5. Gradually mix dry ingredients into wet ingredients until just combined. Do not over-mix.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean. The cake should be golden brown.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
