Ingredients
  

Grains and Vegetables
  • 1 cup dry farro
  • 1 head broccoli, cut into 1 inch florets
  • 1 small red onion, roughly chopped
  • 0.5 tbsp avocado oil
  • 0.5 tsp ground cumin
  • 0.5 tsp ground coriander
  • 0.5 tsp smoked paprika
  • 0.5 tsp dry basil
  • 0.5 tsp dry thyme
  • 2-3 cups kale, destemmed and roughly chopped
  • 0.25 cup pomegranate seeds
  • 0.25 cup pepitas
  • 1 15 oz can chickpeas, rinsed and drained
  • Salt and pepper to taste
Garlic Citrus Dressing
  • 1 large clove garlic, crushed
  • 2 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 lemon juice and zest
  • 2 tsp maple syrup
  • 0.25 tsp red pepper flakes, optional
  • 1 tsp dry oregano

Method
 

Cooking Steps
  1. Bring a large saucepan of salted water to a rapid boil. Add the farro and cook for 15-17 minutes until al dente. Drain through a sieve and spread on a parchment-lined baking tray to cool.
  2. Preheat the oven to 400°F. Place broccoli and onion on a lined baking tray with avocado oil, spices, and a pinch of salt. Toss to coat and roast for about 15 minutes.
  3. While vegetables bake, prepare the dressing by mixing all dressing ingredients in a small bowl or jar.
  4. In a large mixing bowl, add the kale with 1-2 teaspoons of the dressing. Massage the kale until softened and bright green.
  5. Top the kale with roasted vegetables, pomegranate, pepitas, chickpeas, and additional dressing. Toss to coat and serve.
