Cobbler Base
  • 1/2 cup unsalted butter melted
  • 2 1/2 cups all-purpose flour
  • 1 cup light brown sugar packed
  • 1 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 1/4 cups whole milk
  • 1 tsp pure vanilla extract
Cobbler Topping
  • 1 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1 1/2 cups hot water
  • vanilla ice cream for serving

Method
 

Baking Process
  1. Arrange a rack in center of oven; preheat to 350°. Pour melted butter into bottom of a 13" x 9" baking dish.
  2. In a large bowl, whisk flour, brown sugar, baking powder, and salt. Add milk and vanilla and whisk until combined (a few lumps are okay). Gently spoon batter over butter, trying not to mix the two together.
  3. In a small bowl, whisk granulated sugar and cinnamon. Pour over batter in an even layer. Slowly pour hot water over sugar mixture.
  4. Bake cobbler until golden and puffed, 30 to 35 minutes. Let cool 10 minutes. Serve with ice cream alongside.
