Ingredients
  

  • 2 1/2 lbs sweet potatoes peeled and cut into 1-inch cubes
  • 1/2 cup cold water
  • 3/4 cup light brown sugar packed
  • 4 tablespoons unsalted butter softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 pinch salt
  • 1/2 cup candied pecans divided, optional
  • 2 cups mini marshmallows optional

Method
 

  1. Place the peeled sweet potatoes in a pot with 1/2 cup of cold water. Bring to a boil, cover, and reduce the heat. Simmer for 15-25 minutes or until sweet potatoes are tender enough to mash. Drain and transfer to a large bowl to cool slightly.
  2. Preheat the oven to 375ºF. Spray a casserole dish with cooking spray.
  3. Mash the sweet potatoes with a potato masher or two forks.
  4. Add brown sugar, butter, vanilla extract, cinnamon, nutmeg, salt, and 1/4 cup of pecans to the mashed sweet potatoes. Mix until well combined.
  5. Transfer the mixture into the casserole dish and smooth it out evenly using the back of a wooden spoon.
  6. Sprinkle the remaining pecans and mini marshmallows over the sweet potato mixture.
  7. Bake for 15 minutes or until marshmallows are toasted. Serve and enjoy.
