Ingredients
  

  • 2 large eggs
  • 1 cup milk any works
  • 1/4 cup olive oil extra virgin
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 1/2 cups oat flour
  • 10 ounces frozen spinach thawed & squeezed
  • 7 ounces feta cheese crumbled from a block
  • 1/2 cup Parmigiano Reggiano grated + more for sprinkling on top (optional)
  • 1/2 cup green onion finely chopped
  • 1/2 cup dill finely chopped
  • 2 large garlic cloves grated
  • cooking spray for greasing

Method
 

  1. Preheat oven to 375 F and spray square 9 x 9 baking dish with cooking spray. Set aside.
  2. In a large bowl, add eggs, milk, olive oil, baking powder, salt, and pepper and whisk to combine.
  3. Add oat flour and stir with a spatula.
  4. Then add spinach, feta cheese, parmesan cheese, green onion, dill, and garlic and stir until thick batter forms.
  5. Transfer mixture into the prepared baking dish, level with a spatula, and bake uncovered for 40 minutes or until a toothpick inserted in the center comes out clean.
  6. Remove from the oven and let cool for 30 minutes.
  7. Transfer brownies onto a cutting board and cut into 9 squares.
  8. Enjoy warm or cold with a side salad.
