Ingredients
  

Dry Ingredients
  • 1.5 cups all purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 2 tsp ground cinnamon
  • 1.5 tsp pumpkin pie spice
  • 0.25 tsp kosher salt
Wet Ingredients
  • 0.5 cups granulated sugar
  • 0.5 cups dark brown sugar, packed
  • 0.5 cups vegetable oil
  • 1.5 cups pumpkin puree
  • 2 tsp vanilla extract
Frosting
  • 0.5 cups unsalted butter, room temp
  • 8 oz cream cheese, room temp
  • 4 cups powdered sugar
  • 0.5 tsp ground cinnamon
  • 0.5 tsp vanilla extract
Mini Pumpkins
  • 0.5 cups creamy peanut butter
  • 3 tbsp unsalted butter, room temp
  • 1 cups powdered sugar
  • 2-3 tbsp additional powdered sugar as needed
  • 0.25 tsp pumpkin pie spice
  • 0.5 tsp vanilla extract
  • 0.25 cups granulated sugar
  • 2 tsp ground cinnamon
  • mini chocolate chips for decoration

Method
 

Baking
  1. Preheat the oven to 350F and line a cupcake pan with 12 paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
  3. In a large mixing bowl, whisk together the sugars, oil, and pumpkin, followed by the vanilla and eggs.
  4. Pour the dry ingredients into the wet ingredients and mix to combine.
  5. Divide the batter between the liners, filling each about 2/3 full.
  6. Bake for 16-18 minutes or until a toothpick in the center comes out clean with a few moist crumbs.
Frosting
  1. While the cupcakes cool, make the frosting by mixing together the butter and cream cheese until smooth.
  2. Mix in 1 cup of powdered sugar at a time, followed by the cinnamon and vanilla.
  3. Store the frosting in the refrigerator until ready to frost.
Mini Pumpkins
  1. To make mini pumpkins, mix together the peanut butter and butter.
  2. Mix in the powdered sugar and pumpkin pie spice, followed by the vanilla until the consistency is like play-doh.
  3. Roll 1/2 tbsp of dough into a ball, press ridges around the ball, and roll in cinnamon sugar.
  4. Press a mini chocolate chip on top.
  5. When the cupcakes have cooled, pipe the frosting onto each cupcake, sprinkle with cinnamon sugar, and press a pumpkin on top.
