Ingredients
  

Dry Ingredients
  • 3 cups all purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon kosher salt
  • 1 tablespoon cinnamon
  • 1 tablespoon pumpkin pie spice
Wet Ingredients
  • 1 cup butter melted
  • 1 15-oz can pumpkin puree
  • 4 large eggs
  • 1/4 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1/4 cup butter for icing
  • 1 teaspoon vanilla extract for icing
  • 3 tablespoons milk for icing
Streusel Topping
  • 2 cups streusel mix use as needed
  • 1/2 cup butter softened for streusel
Icing
  • 2 cups powdered sugar
  • 1/2 teaspoon kosher salt

Method
 

Preparation
  1. Preheat your oven to 350 degrees F. Grease a 9×13 inch cake pan with nonstick spray or butter.
  2. In a large bowl, whisk together the dry ingredients.
  3. Melt 1 cup butter in a medium bowl. Pour into the larger bowl and stir until it resembles wet sand.
  4. Refrigerate the mixture if possible.
  5. In another large bowl, whisk together the remaining flour and dry ingredients.
  6. Chop the softened butter and add to the flour mixture, then add about half of the pumpkin puree.
  7. Mix until combined. If needed, add more pumpkin puree.
Baking
  1. In the medium bowl, whisk the remaining pumpkin, eggs, vegetable oil, and vanilla until well blended.
  2. Add the egg mixture to the flour mixture in 3 additions, mixing for about 20 seconds after each addition.
  3. Spread 2 cups of batter into the bottom of the prepared cake pan.
  4. Add 1 cup of streusel over the top, layer with another 2 cups of batter, then another 1 cup of streusel.
  5. Add the remaining batter and top with streusel. Reserve some for later.
  6. Bake the cake for 35 minutes, quickly adding the remaining streusel to the top.
  7. Bake for an additional 10-15 minutes until a toothpick comes out clean.
  8. Let the cake cool for at least 15-20 minutes before cutting.
Icing
  1. To make the icing, beat 1/4 cup butter until smooth. Add the vanilla, salt, milk, and powdered sugar.
  2. Mix until smooth, adding more milk as needed.
  3. Drizzle icing over the cake and serve warm.
